Upon leaving The Square Phil came to feel that he had unfinished business with food in London and whilst this philosophy will remain very much in place at Elystan Street the content of the cooking will evolve. The desire to cook simpler food prevails and with a greater emphasis on pure, clean and lighter dishes – full of vitality and flavour.
With many years of experience both in the kitchen cooking and at the table eating the team at Elystan Street have come to understand the importance of one in relation to the other. The aim in the kitchen, as always, is to deliver great pleasure in the dining room – and at Elystan Street we aim to achieve this through serving pure, seasonal, ingredient led, gimmick free dishes which are full of vitality and flavour.

“It started with mackerel soup, poured over eel at the table. The first mouthful transported me back to the incredible precision of manufacture, the intense extraction of flavours balanced with a balletic élan — just perfect. There was a salad of roasted vegetables, cashew hummus, curry oil and shallots. It could have been a Shoreditch riot on a plate, but again, all the textures and tastes were made to tiptoe harmoniously onto the palate. Ravioli of langoustine on a shellfish broth was immaculate, but the star of the starters was sweetbreads with the surprising combination of barbecue dressing, hispi cabbage and sweetcorn.”
